Darlene is the heart and soul behind a traditional Mexican catering service rooted in love, family, and authentic flavors. From a young age, she discovered that cooking is not just a skill but a deep expression of love and connection. She carefully selects only the freshest, highest-quality ingredients, vegetables, meats, and more, shopping personally to ensure that every dish meets her own standards. She believes in serving food she would be proud to eat herself.

Her passion for cooking flourished while working alongside other catering professionals. Combining this experience with her background in Human Resources and owning another business, she launched Catering by Darlene in January 2024. Although she once dreamed of owning a small café, she finds greater fulfillment in being a mobile caterer, bringing personalized menus and authentic Mexican dishes directly to her clients, tailored to each occasion.

Darlene takes great pride in getting to know every client personally. She ensures clear communication from the very beginning, setting expectations and making sure every detail of the catering service is understood and agreed upon. This attentive approach helps create a smooth and enjoyable experience for her clients.

For Darlene, cooking goes beyond the kitchen—it’s about the comfort of gathering around the table with loved ones, sharing stories, and creating lasting memories. This cherished tradition, which she has passed down to her own children, inspires every meal she prepares.
