​Hi, I'm Darlene, the heart behind Catering by Darlene. 🌮

I started this woman-owned business with a simple goal: to bring people together through authentic Mexican food, genuine connection, and heartfelt hospitality.​

Growing up, I learned that food is about so much more than what's on the plate. It's how we show love, celebrate milestones, share stories, and create memories with the people who matter most. I personally select fresh, quality ingredients and prepare food that I'm proud to serve, just as I would for my own family. Whether it's tacos, birria, mole, or a customized menu for your special event, everything is made with care, authenticity, and a lot of heart.​​

One thing people are surprised to learn is that I don't really cook from recipes. In fact, if you asked me for one, I'd probably have a hard time giving it to you! I don't measure ingredients. I cook by feel, experience, and taste. That's how I learned, and over the years I've developed an instinct for what a dish needs. For me, cooking is part skill, part tradition, and part intuition.​

Since beginning my Human Resources career in 2007, I've had the privilege of working with people from all walks of life. Those experiences have helped shape who I am both personally and professionally. The communication, organization, problem-solving, and relationship-building skills I've developed over the years have become some of my greatest strengths as a business owner.  I've also learned how to stay calm under pressure, adapt quickly, and manage many moving pieces at once. ​​

Whether I'm catering a wedding, birthday celebration, corporate event, family gathering, graduation party, or celebration of life, I understand that every occasion is unique. Some events are joyful celebrations, while others are opportunities to support families during difficult times. No matter the event, I bring the same level of care, professionalism, and attention to detail.

One thing that truly sets me apart is the relationships I build with my clients. I take the time to understand your vision, discuss the details, and make sure everything is thoughtfully planned. ​​

When I'm not catering or working in HR, you'll usually find me hiking local trails, attending concerts, listening to local bands, or spending quality time with people near and dear to me. I'm also a proud cat mom to three cats who keep life entertaining and full of personality. In addition, I maintain a Reiki practice that has become an important part of my life. Through it, I've had the opportunity to support people through life's challenges, offer a compassionate presence, and help others reconnect with themselves. Between my work in Human Resources, my Reiki practice, and my catering business, it's fair to say I'm a true people person. I genuinely enjoy connecting with people from all walks of life, building relationships, networking, and creating space where people feel welcomed, supported, and appreciated.​

One of my core values is continuous growth. I believe there is always something new to learn or explore, whether through personal experiences, professional development, meaningful conversations, or the people I meet along the way. I am constantly learning, evolving, and expanding my perspective. That commitment to growth allows me to bring the knowledge, wisdom, and life experiences I've gained into everything I do. My hope is to build a legacy that reaches beyond myself, one rooted in service, connection community, and making a positive impact on the lives of others, whether through food, my Reiki practice, or my friendships.​​

When I look at the different chapters of my life, from my career in Human Resources, to my Reiki practice, to building Catering by Darlene, I realize there's been one common theme all along: serving people. The food may be the vehicle, but the real story behind what I do is that I've spent two decades helping, supporting, and connecting with others in different ways. Whether I'm helping someone navigate a workplace challenge, offering support through my Reiki practice, or bringing family and friends together around a meal, my purpose has always been rooted in people and the larger community I proudly serve.​

Because for me, it's never just about food, it's about community, connection, and making everyone's event meaningful.​
